How to freeze cooke dough or baked cookies

Here is my question, in the past I read somewhere here the proper way to freeze baked cookies without them drying out....cant find that anymore:( Also, another one was can you freeze cookie dough and still have it turn out the same once they are baked? The holidays are fast approaching and I bake tons for the neighbors.....it usually is all done and baked and delivered within 3 days....it is getting old. Any advice would be welcomed!

Freezing cookie dough is the only thing that keeps me making cookies for the holidays. You can freeze it in heavy plastic food containers like Rubbermaid or Cambro. I think it works best if you use a container that is just big enough so there isn't much air space. Another way is to actually form the cookies which works well depending on the type of cookies you are making. If you are making cookies that you roll into balls, shape into crescents or scoop with a spoon or ice cream scoop; you're in business. Roll or scoop the dough out and place on baking sheets that are lined with parchment or waxed paper and freeze until they are frozen solid. Then you can put them into containers, layering them with paper just to make sure they don't stick together. Thaw them in the refrigerator and proceed as you normally would to bake them. As far as freezing baked cookies, make sure they are completely cooled before you start. Then I just pack them in containers with paper between layers so they don't stick and pop them in the freezer. The higher the fat content of a cookie, the longer you can keep it frozen (usually). So, what kind of cookies do you make? I make Cornmeal Almond Cookies and my version of Russian Tea Cakes using crushed candy canes.

Yum..those sound good. I make, snickerdoodles with imported chinese cinnamon, almond crunches (like the chinese restaurants), snicker surprises, peanut butter gooeys, milk chocolate chip, biscotti, those buttery crunchy cookies(forgot the name, they sell them in packages at coffee shops...oatmeal crunch. God, you name it I bake it:) I love cookies for the holidays, I love to bake for 2 reasons, cheap treats for the kid's school and it is very relaxing to me. I just made some peanut butter balls covered in melted peanut butter and milk chocolate chips....they were really easy and it is like you are eating a reese's candy bar but in a bite size:) I love lemon bars and pumpkin bars, but haven't found a good recipe for those yet....I also wish I could clone the mcdonald's custard pies that they sell in December....yum!

You're welcome. I haven't had a decent Snickerdoodle in years. Most of the ones that are sold use that nasty fake cinnamon, even those from a lot of the "better" bakeries. I'll have to get some good cinnamon and make my own.
