 Hummus

Purist food.  Delicious and easy. 
 
1 can garbanzo beans undrained
2 tbs tahini (leave it in a cupboard, don't refridgerate it.
                    yes, the sesame oil will separate, just stir it up)
1 clove garlic
juice from one lemon
a dash of salt and pepper
 
Put all in a food processor and process till smooth.
Leave it in a covered bowl in the refrigerator.
Use as a dip.
I like pita pockets with tomato, onion, feta, lettuce and lots of hummus.

 

 

 
Its hard to see, but the hummus is in there, lots of it.
A few kalamata olives and some lemonade, my healthy dinner is complete.

      Just made some hummus last weekend; I use the recipe from Jane Brody's Good Food Book which adds some diced and sauteed onion and garlic, a splash of soy sauce, and some ground cumin to your basic recipe. I have to watch that I don't eat it all at one sitting.

        Good post.  That pita is crying out:  "Where is the bacon??"  LOL  I can't seem to find the sesame butter anywhere locally.  It's been a while since I had some.

          Seems I have read some recipes that use peanut butter in place of the tahini.  One of these days I'm going to try that.

            I love Hummus! I like to add a half jar of roasted red peppers before puilverizing...also have added half an avacado which can be nice too!

              Oh, YES! Roasted red bell pepper hummus is wonderful! I'd forgotten that I made that sometime in the past year.

                So simple and SO GOOD!

                Don't make the mistake and try making it with black beans like I did. It tasted good but was a horrible purple color.

                  I like hummus plain with a touch of garlic the best.
                  I'm going to make some FALAFEL, easy,  later this week which I will share with you when you add that to the sandwich (minus the feta) plus the hummus, it is wonderful.
                  Instead of one plain clove of garlic processed into the hummus, add one clove of ROASTED garlic.
                  Even if you just take a skillet and "dry fry" one clove with the peel on till its all black, then cool and peel, then process it, its a nice flavor.

                    Hummus is a staple at our house.   Homemade is best, but in a pinch, the Athenos brand from the market is very good, too.  As a dip with pita, pita chips, carrots, celery, radishes, great stuff. 

                    Darn, I need a morning snack now.....

                      i like the idea of roasting the garlic before putting it in...will have to do that!!

                      can hummis be frozen??

                        Marlene--a place nearby serves both as a hummus appetizer, and maybe I don't notice the color because it's dark.  :)  It's good with black beans.

                        joclyn I haven't tried but I would think it's not the best because beans in general get mealy when you freeze them, and it's mostly beans.   Anybody tried freezing it with success?

                          I've found it's too easy to just visit one of our local Middle Eastern markets in Dallas and buy just what I need for very little money. And, theirs is fresh, house made and, delicious!
