    The Rootbeer Stand in Corbin, Ky.
    An old A&W that's now gone indie. They brew their own root beer and have the area's own "Chili bun." It's a seasonal operation so you'd best check first.

    A bit off the interstate but worth the drive is Wallace Station. Featured on 3D it's a fantastic sandwich shop in the heart of horse country. Well worth the drive.

    They have a sister restaurant if you're looking for something more upscale.
     
    Guy visited a couple other places in and around Lexington and then just off 64 in WVa including the polarizing "Hillbilly Hotdogs."

      The golden girls at the Clinton Norris exit is super.  I have been there many times.  Breakfast is super and the Broasted chicken for lunch is super.  Easy off and on Interstate 75 in a log cabin.  You cannot beat it.

      The Corbin exit has a great original KFC which is the home of Colonel Sanders.  A net museum there.  Great photo opportunity.

        Here were some places I ate in Lexington. They are not right off I-75/I-64 though, you have to go into town.

            Before you leave Knoxville go to Litton's for good road food. 
            Litton's is a good family restaurant in Knoxville, TN but it's not convenient to I 40. If you took the I 640 by pass around Knoxville, TN on the N side it's pretty convenient. Get off I 640 at Exit 6 and go N on N Broadway SE to Litton's for good country family food.

              As someone who has been a Hall's customer since 1966, I have to say that Hall's is now a little hit and miss.  Sometimes it's good, but unfortunately, sometimes it's pretty mediocre.  The Hot Brown is still pretty good as is the fried catfish.  With everything else, it's a shot in the dark.

              At Exit 59 on I-75 North, there's a little place called Jean's that serves comfort foods and their cream pies are pretty good.
               
              At Exit 156 on I-64 East, there's a place called Smokey Valley Truck Stop, which was featured on Diners, Drive-Ins and Dives.  Great breakfasts, comfort foods, and desserts.  Good prices.  Over the years, I've been there about three times.  It's kinda old and outdated, but worth the stop.
               
              Oh, I forgot.  If you take Exit 95 on I-75 North, you can follow HWY 627 East to save some time making your way over to I-64.  It goes by Fort Boonesborough and then on  into Winchester where you can pick up I-64.  There are a few Mom & Pop type places in Winchester.

                I agree with the estimation of Halls.
                 
                I've also been to the Smokey Valley Truck Shop, I just couldn't remember the name. It was definitely good roadfood.
