I Need recipe help, Fruit Juices to vend Tue, 05/17/11 12:28 AM (permalink)
I am vending at a large festival this weekend. One of the rules is I cannot sell soda or water. Juices are OK. Last year I did lemonade and ice tea. This year I am hopping to do more sales by adding more flavors.   The big thing around here is fruit juices  watermelon, lime, lemon, cantaloupe, ect. They are displayed in big pictures with ice and fruit pieces  and vended with a ladle. The question is how do you make them. I have looked around for a commercial  beverage base with no luck. My wife thinks that the fruit is pureed  and then mixed with water and sweetened with simple syrup to taste.  I do not have time to experiment,  so I am hopping that someone here has some advice.

Thanks in advance

Bill

Here are a couple of threads on Roadfood for lemonade (which would, of course, also work for limeade or orangeade):

Most of the commercially bottled juices use white grape juice or apple juice rather than simple syrup for their sweetening (so they can claim "no added sugar").  For that matter, you probably could vend the bottled juices that are available just as is, by adding some floating cut-up fruit for looks.  If you could handle the quantities involved, here is a website that sells fruit concentrates:

What about a nice ice cold apple juice or say Welsh's grape juice, can't get any simpler than that. Heck now I'm thirsty!

I'm sure they have the market cornered on soda and water and don't want any competition.
