you know theres a really good Homemade recipe for what is essentially Shake and Bake---it didnt invent the idea--just packaged it--this recipe works!! Easy to fix--good tastin--economical--Chicken! Thighs are also my favorite!
* 1 cup all-purpose flour
* 2 teaspoons cornstarch
* 2 teaspoons paprika
* 2 teaspoons onion powder
* 2 teaspoons salt
* 2 teaspoons sugar
* 10 teaspoons vegetable oil
* 3 1/2 teaspoons poultry seasoning
* 2 tablespoons crumbled dry parsley
* 2 cups fine dry breadcrumbs
Combine dry ingredients in a mixing bowl; add oil. Mix well. Place in zipper-top plastic bag and store in freezer. Use to coat chicken, pork or veal.
To use: Line a baking dish with aluminum foil; grease well. Moisten each piece of meat with water. Shake off excess and shake in bag of mix to coat, one piece at a time. Sufficient for 6 pcs cut up chicken.
Place in baking dish and bake in 400 F oven for 30 minutes or until done, depending on size of pieces.
Store unused mix in freezer.
I've done this in a taoster oven successfully--killer with potato salad from the deli and broiled tomatos from the garden(also from the same toaster oven)--It impressed several Berkeley women that i could actully cook dinner for two in a toaster oven in a one room apt with shared bath and have NO dishers to do and all fully recylable! Clouth napkins and all!

4 c Flour
2 ts Cayenne pepper
1 c bran flake cereal, crushed
2 tb Parsley flakes
2 ts Garlic powder
1 tb onion powder
2 ts Chili powder
2 tb Taco seasoning
1 ts Seasoned pepper--like lemon pepper
1 ts Curry (or more!)
1 ts Sweet basil
1 ts Oregano
Mix all together and use for coating any and all types of meat. I use a
large size ZipLoc and just keep it in the freezer. You can add more of the
cayenne and chili powder if you so desire. I usually just throw in what I
have at the time I make it so it is never the same twice. It is a great all
round coating.
As for appearing lame for liking Shake and Bake----it actually IS home cooking!! KFC on the other hand.......
