 I made fabulous onion rings.

I made fabulous onion rings. Fri, 06/25/10 6:54 PM (permalink)
Made a batter of one beaten egg; a shake or two of red pepper and garlic powder about a cup of milk and then enough flour to make a batter the consistency of pancake batter. And 1 tsp baking powder. This makes enough for two large onions. sliced and separated into rings.

Some say that needs to refrigerate overnight. Not sure why - I let mine sit about an hour.

I use a skillet about 12" and less than an inch of peanut oil heated to around 325 to start. The oil does not need to be deep enough to cover them because you can flip them with a fork. One layer at a time - takes about three minutes a batch.

Bonus points for Vidalia onions. The family lines up at the stove for these.

    That sounds like a good batter for fried mushrooms also.

        Sounds good, however a pinch or two of Old Bay in the mix would really enhance it!

          Next time I will make pictures if I can. It's pretty a busy process, but, I'll try. And, I will give a shake or two of Old Bay into the batter.

            My onion rings are different, in that there is no batter. Just soak the rings in milk for about an hour. then shake in a bag with salt papper and RICE flour. Fry like don-o said.
            The rice fourl gets very crispy and doesn't get soggy as the onions cool off.
