I wouldnt say its Roadkill, Wed, 02/7/07 8:50 AM (permalink)
But I had some Venison in my freezer that I friend gave me and I took it out for Superbowl and my Wife and Kids refused to eat it so I took it to the restaurant and made some country stlye steak with it and sevred it to my customers.I called it steak and gravy and they ate it up.Do you think I should have said DEER MEAT?What would you have done if you found out you just devoured Bambi?

I've devoured a lot of Bambies in my lifetime so that aspect wouldn't bother me. However, I would feel the way I do when I order "flounder stuffed with crabmeat" and the dominant ingredient in the stuffing is surimi - deceived.

Jelly: I really think you should have told your customers what you were serving them.

OMG! I was there. I swear I didn't know it was from a cute fuzzy animal! I can't sleep! I'll never eat again, except maybe at the most expensive steak house in the state! As a devout follower of the Church of Disney you've made me commit a mortal sin and I'll never be able to enter the Magic Kingdom! I'm suing you for emotional distress!

Seriously, if you own a business you could open yourself up to this sort of thing just by omitting information.

But I did once meet a guy from South Florida who used to pick up, clean up and freeze whatever roadkill he happened upon and throw one big barbecue a year. He got a kick out of the Miami model-types saying, "this is the best chicken I ever ate."

When you hide what you are feeding people, you not only are setting your self up for some ugly attitudes, what if that person was allergic to something? What if they died because they ate something they had no clue they were eating? You'd get more than an attitude, you'd get a little time in the pokey! Honesty has it's own reward!

My dh is highly allergic to certain foods and has to avoid certain proteins. We ask every time, but if we are told it's steak and it's not and he was allergic to that protein it might have made him really sick, or if we were on the road and couldn't get help fast enough, it could kill him.

Why would you want to hide what you feed people? Is it the fact that money, and the need to use something up, is more important than someones well being? I'm sure you'd say no to that question if you are an honest, upstanding business person. But maybe you need to think of your customers as family members instead of that poor Joe you got one over on.

            Well said, Bham Babe!

In the past, we learned that the OP had contempt for many of his employees. Recently, he posted something that was racially offensive. Now, we learn that he is so contemptuous of his customers that he is willing to deceive them while simultaneously opening himself up to litigation in the event that someone suffered anaphylactic shock from eating something to which they were highly allergic. Even if someone is not allergic to venison, this is still misrepresentation of the product being offered to the customer.

I would really like to know the name of the OP's restaurant, so that I can avoid it.

              Hello All,
Jellybear, I believe, but am not sure, that in my state, Virginia, you have to
have a special license to serve deer, simply to make sure it didn't come from
poachers. Again, I'm not sure. I know it is served in Northern Virginia, and
recently a new restaurant open that serves venison, but it is so labelled on
              the menu.
Regardless, you are a tricky fellow and I'm glad everyone loved the food.
              Take Care,
              Fieldthistle

"steak" is a cut NOT a statement of what animal it was the origin. As Field said in almost every state I know of a wild animal cannot be served or sold.

BTW, Venison is suggested to many w/ food allergies as it is low in fat, has no growth hormones (almost all commercial beef does) and is "slap your mama" good".

I'll tell you what I wouldn't have done. I wouldn't have broken the law by selling venison that hadn't come from a licensed commercial source.

Now if we are talking FRESH road kill, then here is a southern delicacy. They are best when shot with a .22, but if you have to resort to roadkill make sure it is really fresh!

                            Smothered Armadillo

1 nice size armadillo - about 3 pounds of meat
                            2 chopped onions
                            1 chopped bell pepper
                            4 cloves garlic, minced
                            2 sticks celery, chopped
                            1 stick butter
                            1/4 cup green onions, chopped
                            1/4 cup fresh parsley, chopped
                            1 TBSP flour
                            1 TBSP worcestershire sauce
                            1 small can mushrooms
                            1/2 cup burgundy wine
                            cajun seasoning

Prepare the armadillo by placing him on his back, cut off it's head, tail and feet. Remove belly skin. then pass the knife along and around shell and remove it. then clean same as you would a turtle. Wash, then scald the meat. Remove excess fat. Cut up in pieces.

Add butter to a cast iron dutch oven

Add meat and fry until meat is brown

Add all the veggies, saute 5 minutes

                            Add wine & mushroom juice

Cover the pot and let simmer until the meat is tender, adding water if necessary

                            Remove meat from pot

Add juices to of flour & water (make a smooth paste)

Also at this time add the onions, parsley, mushrooms & enough water to make gravy

Cook 5 minutes and pour over the meat and serve with white rice.

You would have broken the laws of the Great State of Mississippi & the health department would be eatin' you alive for storing your meat at home and transporting it to a restaurant. I have no doubt it was delicious & the best steak & gravy ever for some of your patrons. But I wouldn't try it again.

A local organization was selling bowls of wild game stew at their fundraisers & they got a stiff warning. Now, the organization sells tickets to their event and you get a free bowl of stew when you arrive.

I cook with lots of deer meat, especially ground. I use it in all my chili, taco soup, spaghetti, etc. It never fails when the Bambi subject comes up at a potluck supper & certain folks relate how they hate deer, would never eat it... Then they want my recipe for the dish they have just finished off. The recipe always lists "ground meat"

Let's say that he did not break the law and was entitled to do this.

I would call him a very unwise businessman to put in on the menu as "steak and gravy". In restaurants that I have gone to, when venison is on the menu, it commands a premium price, which many people are happy to pay to be able to enjoy this delicious meat.

Meat must be USDA inspected to sell in a foodservice establishment. Fish and shellfish must be purchased from certified dealers. You can't go around willy-nilly plunking deer and fishing in your local pond and serve it up in a restaurant!!!! Good God, I have never heard of anything so preposterous.......and then to label it "steak and gravy"??? NO WAY!
