First let me say hello, great site with a lot of information.
 
I was throwing my yearly block party over the weekend and an old friend stopped by. He over heard me talking to some friends about my desire to open a food truck business. He comes up and says " I just bought a closed down Miami Subs, you can have any of the contents, I am tearing the building down." tomorrow I am meeting him there to see what is all there. I can not wait till tomorrow! My hopes are that I can get all of the stuff i need and sell what I do not to by a used panel truck.  
 
I plan to do the weekend / beach / festivals / events thing to start. I have a good job that pays well so I am not ready to jump right in. I will definitely be asking MANY questions from the experts here in the future.

    Hey Brian,
     
    Its Topshop. My wife and I opened a trailer based food business this spring for our daughters to run. We sell Ice Cream, fried chicken, french fries, corn dogs, onion rings, and hot dogs. I built the trailer from a new empty car hauler. Fun project.
     
    I assume your business will be BBQ based?

      Hey Dave, sweet, how is your venture going?  Definitely going to be BBQ based with a mix of grill items for the people that are not bbq fans.  Had a great score with this restaurant equipment. Have most what I will need for the truck with plenty left to sell to by the truck and items necessary. Hard part seems to be finding a commissary so far.

        Not sure about in FLA but you may try to ask other road vendors about commessaries in your area. here I was able to use my home as a base as long as I pull water from a registered public water supply that gets quarterly tested. All my food comes pre cooked and frozen from either Sysco, Restaurant Depot, bJ's or Sams so no need for a kitchen other than the trailer.
         
        The trouble you may have is the raw meat thing and making sure your smoker passes the HD scrutiny.

        But Brian, Everyone loves BBQ.
         
        The venture is going OK. It would be more profitable if it was owner operated but the reason for starting it was to get the girls working. I only run the books, change out the water daily, and change the propane tanks as needed. The water jugs and propane tanks are too heavy for the girls to handle well. We will only be open from March or April to end of October each year. Noone wants icecream up here in winter unless they can sit down in a heated dining room.

          Brian, Where is the old Miami Subs building the guy is tearing down? I remember when they were going great guns here on the Treasure coast though I don't remember the specific locations. It seems there was one at the Okeechobee rd exit at I95 and the Turnpike

            Its across from K Mart, next to Sherwin Williams. The place has been an Arbys, Miami Subs and a Greek Restaurant.
