I'm getting tired of.............

running out of Hot Sauce so this should last me for awhile!

    Heck, I put that much on my eggs at breakfast.

    LOL......  one can NEVER have enough hot sauce and it has to be hot!  Hotter the better!!!!

    I'm not a fan of hot sauce, but we keep a lot around because most of the family uses a LOT. I often wonder about the big bottles that I see, though. Would it not be better to have small bottles so that it is always fresh??? Does it lose flavor once opened? In my day, most Marines carried a small bottle of Tabasco (tm), not really hot by today's standards, but made by a retired Marine Reserve General.
     
    I remember reading that the neighbors of the new Schiracha (sp?) factory, are not happy during production season. If they were to do it again, I'd bet that the owners would put the factory 100 miles into the desert, and bus in the help.

    Actually Tabasco was first made by a Banker way back in 1868. 
    As to freshness......  I have kept open Hot sauces in both the fridge and on the counter and have never had any spoil or lose the flavor!

    Tabasco sauce will never spoil with the high acidity of the vinegar, never loose it's flavor...
     
    Just because it's a bottle of pepper sauce, don't mean it's (genuine) Tabasco Sauce

    I used to buy huge bottles of it, but now I just go for the volume discount on cases of the types of hot pepper sauces I use constantly because I don't like trying to deal with a big bottle. Different brands, different types within brand, for different uses. Tapatio has been available at the dollar store (10 ounce bottle? I'd have to go look) for a few months, so I just pick it up there if I need some.
     
    According to McIlhenny:
    According to family tradition, TABASCO® brand Original Red Sauce was created in the mid to late 1860s by Edmund McIlhenny. A food lover and avid gardener, McIlhenny was given seeds of Capsicum frutescens peppers that had come from Mexico or Central America. (Who was, in fact, previously a banker).
     
    Our Original Red Sauce has a shelf life of 5 years when unopened and stored in a cool place, but due to the potential for color change based on light and temperature exposure, we say that it is “best by” the third year.
    Any TABASCO® brand product will be good throughout its respective shelf life, even after the bottle has been opened. Once a bottle of sauce is opened, the color may change, but the product won’t spoil. Refrigeration almost always helps to slow this process but isn’t required.
     
    And BackRhodes is absolutely correct...all hot pepper sauce is not Tabasco just like all facial tissue is not Kleenex.

    I buy the big bottles also, they will stay good unrefrigerated for a few months, but they never last that long around me. I think that sized bottle of Tapatio goes for around 3 bucks around here. I usually get another brand, Valentina (the regular, they make an extra hot version also), same sized bottle is around 2 bucks. Can't beat that.

    We switched from the 'original' Tabasco to the 'Smokey Chipotle' version. I must admit I like it a lot, especially on breakfast eggs.

    No I save the Cranberry juice for some Russian drink, I can't remember the name of it, because I just drank a bunch of them!

    When my grandson was in Iraq I was sending him four bottles of the Tabasco chipotle stuff every month.

    Cholula for me.  Great on eggs.
     
    Don't really like the original Tabasco as it has too much vinegar in it.

    I really like Cholula too, but I don't like the price point. It goes for around $3 a bottle around here, and I can get a big bottle of comparable hot sauce for the same price.
    I'm also not a big fan of the original Tabasco, but I do like the green version.

    I'm a hot sauce on eggs guy too.  Cholula, Buffalo's chipolte, Melinda's XXX, and recently I've been experimenting with my own home made ones.
     
    I think I like Cholula because while it's fairly mild in it's heat, it has a whole load of flavor.  Onion, garlic, carrot, chili, spices.  A really nice rounded out flavor sauce with heat.

    Yes, flavor is more important than heat.  Tapatio is also good on eggs.

    Not sure it is any better in other places that have pictures.  I got 'caught" a few times in japan trying to use window photos. but yeah.a nice puffy steaming burger with golden fries splayed out in front of it seldom ends up 'in the bag"
