If you know of a Polish deli near you, try to pick up a couple of Polish dried mushrooms to add in. Adds a DELICIOUS WOODSY flavor, I love Polish dried mushrooms.

Fieldthistle, those dried mushrooms, rehydrated, are wonderful in soup. I also use them in my cream sauce for steak or pasta. Rehydrate your mushrooms, reserve the liquid (watch for the grit in the bottom, don't use that) and add them to some heavy cream. Simmer gently, add a little sherry at the end if you wish, kosher salt, white pepper. Another thing I just bought is morel powder. This enhances any sauce you want to make. You don't need but a touch, and that's good since it's so expensive. Try that in your mushroom soup.
