 In praise of the western omelette

In praise of the western omelette Thu, 01/29/09 1:43 PM (permalink)
Is there any omelette better than the western?  Not for me.....
 
3 eggs, diced smoked ham, diced onion, and a ideally, a mix of diced green and sweet red peppers.  I prefer no cheese, that takes it away from being a true western, in my book.
 
Lightly browned on the outside, and folded in the middle, or into thirds, it's a great breakfast, especially paired with good home fries, and whole wheat toast.  Wash it down with some good strong black coffee, and you are good until lunch, or maybe after.
 
Can it be improved upon?  What do you think?

    The only thing better than a Western omelet is the Western omelet sandwich that I used to get at Pete & Clara's cafe in San Juan Capistrano.

    I do like pork chile verde poured atop a Western.

      When I was a little boy my grandfather taught me to make a Western. He insisted that no boy should get past 6 years old and not know how to make one. I taught our kids (despite the handicap they were under, being girls) by that age, too, and my grandson was 5 when I taught him.
       
      Oh, and never cheese.

              I know.... we put tomatoes in everything. At least I won't suffer from lycopene deficiency.

                Nothing wrong with a dinner quiche...put the leftover in the frig & it makes a fine breakfast the next morning. Almost as good as cold pizza!

                  In Kenosha, Wisconsin, real girls Lynne and Chris make GARBAGE PLATES that are not to be missed.                       Well, a traditional Western has eggs, ham, green pepper and onion, and that's it. Now, west of the Mississippi, as I recall, they are Denver omelets, but they didn't have any cheese there, either.

                        My favorite omelet.  I even like it at... don't faint... IHOP.

                        No tomatoes on mine, please.  I like mine dry.  Used to love a little Tabasco on it, but it's been replaced by Chululas.

                        IHOP used to serve, many years ago the Western Sandwich which was an onion roll topped with a Western Omelet.

                        Couldn't beat it.

                                        I will mostly agree with the original poster.  A Western omelet; prepared right; needs little else.  The vegetables must be crisp-tender and seasoned with cracked black pepper and a bit of kosher salt.  I do have to have my hot salsa on the side; though.  With coarse ground & buttered grits; hot black Columbian style coffee; and whole wheat bread.  Yes.  Valhallia.
