When I was a kid, my mother occasionally made instant mashed potatoes, and I found them to be on the right side of edible. However, this changed when I tried Kentucky Fried Chicken "mashed potatoes", which tasted to me like the entire potato content consisted of the cook waving a potato at the mixture for several seconds. That put me off instant potatoes, probably for life. I will not order mashed potatoes in a restaurant unless somebody else orders them first, and I am satisfied that they are fresh.
 
Now, that all said, I will also state that I find, like a number of others here, that the dried potato flakes make an excellent INGREDIENT, used mainly as a thickener. I use it mainly in stews, because, frankly, I don't like fishing out all the pieces and putting a stick blender into the remainder, like I do with pot roast.

Don't loose any sleep over it. Trader Joe's recieved one of the lowest scores on the Serious Eats Taste test.


Never tried their fake taters, don't intend to; Betty Crocker's Butter & Herb "rules".  Mrs. Metro and I miss them for other "stuff".

Trader Joe's is opening it's first store in Texas next year in Ft. Worth. The lease has already been signed. 
They're looking at two locations in Dallas as well.

MetroplexJim:  Another good quick gravy is the Campbell's Golden Mushroom Soup.  Great over sauteed onions, mushrooms and porkchops.
 
I'll have to buy a box of the Betty Crocker Instant Potatoes to put on the shelf next to my boxed liquid milk.

Never mind maypo or coco-wheats.  Instant mashed potatoes ... my favorite hot breakfast "cereal" from back in the day ... with butter and Franks hot sauce.  Especially after a rough night on the town.
