Hello. Just wanted introduce myself and to say I'm happy to have found this forum. I've been reading for the past couple days and am impressed with the willingness to help others. Also nice to see a couple other Alaskan's here. My name is Angela, and will be opening a mobile food unit. This will be a part time weekend gig for me to start, just doing festivals and special events. I'm new to the food business, but not to the circuit. I've been a soap maker and done festivals and shows for many years. I've researched and planned for quite awhile (off and on over the last five years) and am finally ready to take the plunge and change over to food. Since I have a limited budget, I'm converting an older travel trailer for my unit. My user name is my business name, and as you can probably guess our primary offering will be pasta. Pan fried noodles were my fair favorite growing up and I'm doing a twist with a variety of flavors. Pasta is something that isn't being done here, so hopefully it will go over well. My first major event will be a three day festival in mid July. I'm hoping to have a couple trial run weekends to work out any kinks beforehand. Just waiting on the approval of my plans from the health department before installing equipment in case I need to make any changes to the layout. I'm open to advice and tips for a smooth start.
