Italian Rum Cake

My favorite cake is Italian Rum Cake from Florentine's Bakery in Utica N.Y. It's a Italian sponge cake, tastes more like a yellow cake than sponge, sprayed with a diluted rum, cut into 3 layers. On the first layer is an Italian chocolate pudding, cake, than a Mascarpone pudding with strawberries, more cake with a whipped cream frosting with splintered almonds around the cake. Absolutely delicious. It's nothing like a Caribbean Rum Cake

In Milford,Ct there was a bakery called Romanos that made the best Italian rum cake I ever had. The story is he bailed his son out of jail and the son skipped town and dad lost the building and business. That is what the rumor was anyway. I would love to find a similar cake in Ct when I visit my parents.

I have always liked the rum cake from Vacarro's in Baltimore's Little Italy. Very good flavor and not overpowering like some Carribean rum cakes. Thanks, Kevin
