Joey Chestnut's steak-eating record smashed by mom of four

Molly Schuyler demolishes Joey Chestnut's record, completing the 72oz steak challenge in 4:58 AND her second in 9:59! #bigtexan #72ozsteak
Joey Chestnut is the undisputed king of Independence Day, but Memorial Day now belongs to a 5-foot-7, 125-pound mother of four — and destroyer of 72-ounce steaks (and Chestnut's records).
Molly Schuyler, a professional competitive eater from Bellevue, Neb., who broke a world-renowned wing record earlier this year, on Monday broke one of Chestnut's red-meat records, the famed 72-ounce steak challenge at The Big Texan Steak Ranch in Amarillo, Texas. The challenge is a free meal to anyone who can eat the entire 72-ounce steak in one sitting within an hour, but has grown into another speed-eating challenge in professional circles.
But it's not just that Schuyler broke Chestnut's record. According to the eatfeats.com database, she nearly cut the seven-time July 4 Nathan's Hot Dog champion's record steak time in half — then ate another 72-ouncer for good measure.
WHAT DO YOU THINK OF THESE PROFESSIONAL EATING CONTESTS?

    I saw a Lutefisk eating contest once ... about 25 years ago ... I still can't "un-see" it ... :-)

Even though seeing is believing, I can't really see the point of these exercises.

    In any case, enjoy:

That hurts me to watch.  I had breakfast with Poverty Pete this morning and ordered two eggs, sausage, grits and biscuits and could not finish that.  We had breakfast at Pete's Coffee house in Knoxville which is sorta small and been voted the best breakfast in Knoxville for six straight years.  Poverty Pete is in Knoxville as a driver for Dolly Parton's concert tonight.

Unless she's a ruminant, I don't know how or if she digested it with no chewing. Lucky she didn't choke. I know how long it took her to eat it but I want to know how long she was able to keep it DOWN If I ate just a normal meal like that, I'd be getting very sick awful fast. I don't like food marathons.

Seriously, do you suppose they make you  sign a waiver? I can just see someone having a mishap and suing the restaurant for damages. I can see someone, maybe slightly drunk, trying to eat one in less than an hour but 15 minutes? Just crazy.

In this day and age I'll bet you have to sign a waiver just to think about entering a contest like this!

The linked story in the original post mentions that the fat didn't have to be eaten; I wonder if this is still true.  And what cut of beef is used, anyway?  "Steak" can mean a lot of different things.

I'd much rather eat less and enjoy every bite...

Although they don't say so specifically, looking at the picture, it looks like a Sirloin.
