Jumbo Lump Crab Gazpacho

I love this recipe, being in Maryland helps. 2 cups plum tomatoes, blanched, peeled, and seeded 1/4 cup bell pepper seeded and chopped 1/4 cup cucumber, peeled, seeded and chopped 1 clove garlic-2 if you insist 1 large shallot chopped juice of 1 lemon 1 tsp each of mint, basil, and cilantro, chopped fine, if you don't like cilantro, leave it out 1/2 cup jumbo lump crab, picked over salt and pepper to taste combine all ingredients except crab and herbs and puree until very smooth, fold in the herbs and salt and pepper to taste, garnish with the crab and chill easy recipe, great taste!

That does sound good, but with fresh jumbo lump costing upwards of twenty five bucks a pound here, I don't think I'd use it for a cold soup. Now, if I lived where the crab didn't cost as much I'd likely change my mind.

That makes me feel fortunate to live at the shore. The only thing I pay for crab meat is in chicken wings to bait my traps and hand lines.

Michael, if you have a Costco nearby you can get Phillips Jumbo for under $20.00 or lump which also works, for around $13.00 Lb.

ChrisOC That makes me feel fortunate to live at the shore. The only thing I pay for crab meat is in chicken wings to bait my traps and hand lines. Chris, that brings back some good memories from my youth! My parents rented a house with a dock on a boat basin in Wildwood for a few years. Those chicken necks my Mom saved in the freezer all year became our bate for some great crabs! One two week period we caught about one hundred! Good times!

Michael, if you have a Costco nearby you can get Phillips Jumbo for under $20.00 or lump which also works, for around $13.00 Lb. For starters, I don't do Costco. More important, I never do Phillips. I can get Phillips crab at my local supermarket, but not only is their stuff pasturized, you can never tell where it came from.

The best crab I ever ate came from Chesapeake Bay.Some little dive in Ocean City,Maryland.
