I hope you can understand this it's a copy of a post I posted from another forum on this topic. The only differance was in this forum the HI was draging around a local TV crew. I think my reply applies here as well as the other forum. I'd rewrite it but I'm dead tired and on my way to bed. Night all. It's never happened in our area I promise. The entire inspection process is to see your kitchen as it is every day while your serving customers. Our HI inspector WOULD NEVER GIVE US NOTICE OF AN INSPECTION. If my HI showed up with the local TV station in tow, the TV crew would not be allowed in my kitchen door. They could stand outside and shoot video of what ever goes on inside because the entire [well almost} front of my trailer is glass but come in no way.I spent 25 years in the media and I promise they have no place in their left wing heart for treating you fairly. First most are snot nosed kids with no life experience and no understanding of most of the subjects they cover. To explain to a 22 or 24 year old reporter fresh out of school why your restaurant kitchen doesn't look like the one he or she saw in a text book is impossible. Furthermore they look for bad news, not good news. And I promise you they could shoot 10 hours of video of a perfect kitchen and 30 seconds of a average kitchen 20 minutes after a rush hour. When the 6:00 o'clock news comes on the dropped sandwich, beans spilled on a counter, or the full trash can video will run over and over. You can't make a friend of someone that comes to your door to do evil, no matter what you hear on Sunday at 10:00AM. LOL I have never received less than a 95 but most are 100% from our health department but I do events all over the state and once had a health department inspector do an inspection in eastern Illinois and give me 100. Then come back the next morning and write me up for not having a hand wash sink.As I explained to her "it's a four bay sink with one clearly designated as the hand wash sink with a soap dispenser, and paper towels right above it. It has been in my trailer for two years, it was here yesterday why didn't I get hit for it then? Her answer was you didn't point it out to me. That my friend unfortunately is what we have to deal with from time to time. Jack

hi, rrrrrrrrrrrrrrrrrrr should i say hiiiii....whats wrong with uuuuuu people, half of what i said was in jest the other was letting off steam.... i can't stand people that feel they're above others r just down right better... all you people that say ohhhh i'll buy HIM a steak dinner, ever thought it just might be a female? if i wanted to i could be as anal as you rrrrr and make a case out of that.... i'm also guessing ya'll r the type that never ever speeds, and if you do go over the spead limit u turn urself in, because that's the right thing to do and ur so concerned with other's health, if ur so concerned then why do you speed? because u know u do....rrrr you're just concerned with their health when it comes to food and cooking, that's right before you run um over with ur truck....for gods sake lighten up.... there rrrrr pricks in every walk of life, and yes i know it's hard to believe but even in the gov. you base all ur trust in ur gov. the health dep. yet they're constantly changing the rules...kinda like ur health and doc. today it's good for you tomorrow it's not... to me ur nothing but a kiss a--. and i bet ur also 1 that would run and tell if someone was doing something wrong.... lighten up it's just life..... oh and about using the R? i have 2 finger on 1 hand i lost the others fighting for this gov. see i do have a right to speak....how about you?

I suggest that you re-read what you wrote and ask yourself if you really want to present yourself to this forum in the manner that you've chosen. As a veteran, who suffered wounds from combat, it is hard for me to stomach a fellow veteran using combat and injuries as an excuse for bad behavior. If you want to type the way you do and use words which present a poor image, that is your right and you don't have to offer up an excuse. By that same token, quit using your wounded Veteran status as a club to bludgeon others; it is not comely and I don't want folks looking at your behavior and putting me in the same boat with you. And I most certainly do not look at non-veterans, or non-combat veterans, and feel I should be condescended to just because I served. That is not why I served in the military. As to your attitude about about the health department, food safety, dealing with the government, etc., I don't see how you're going to make it in the food business. I have had huge frustrations with the beauracracy, but that's life if you choose to go the food business route. And yes, if ever I were a customer in your establishment, and I saw your business committing a critical food-safety violation, not only would you lose my business, but I would report you to the local health district. You don't have a right to to place consumers in the path of a potential food-born illness.

I once overheard a news reporter say to her crew member upon arriving to do a story on an event I was attending: "I don't know what we're gonna do. I don't see how we can put a negative spin on this." Don't you just love news crews?

Billy, if you want to be taken seriously on this forum you really need to cease with the teenage shorthand. What, R U 14?
