Just picked up my cart

Picked up my cart this weekend. Cooked my first dog on it for my brother. I will need more practice, that's for sure. But we had a good time. I have a few weeks before all the state lic.hoops are jumped through, so I will be practicing on my friends, poor bastards. Looking forward to getting going!!!!!!!

No!! The guy i bought it from was trying to rent it out with a party business he was running. he wanted to drop it off and go, but it never worked out, he only rented it 2 or 3 times and really didn't have much info.

Well to tell you somewhere to start. Go to the top of page and search members. Look up Arnie TX and look at all his posts. He has learned the art of steam pretty quickly. Has pictures with his posts. Main thing is to get the water to where you have the right temps and then set or at this time idle the burners back down to idle. If your playing with the cart to much and you get sore feet we also have a solution for that.

Thanks for the input. I've been watching for and reading Arnie's posts. His progress has been helpful and fun to watch. I will go back and look over some of his old posts to get some more ideas about steam. In the mean time I will just try different things and find what works for me. I know like everyone here I will make mistakes, but hopefully not as many as I would have had it not been for this site!!!

Congrats on your new cart. What did you get? Can you post pics of the steam table? Arnie

It's an Island time. Three big pans two small ones. Looks like new and was a steel. I hope it's to small for the business and that I will have to find something bigger to spend all that money on. LOL But I did want to start small, keep my menu small, and my expectations. Work hard to grow from there. We'll see??
