Kartoffelsalat (Potato Salad)

Moin Forum!

The trad. german Kartoffelsalat is one of my fav. supplements for fried fish meals, also with Frikadellen (Meatballs), or with a Bockwurst, a Bratwurst, and a Currywurst.



My Grandma Alberta used to prepare the best Kartoffelsalat ever, her self-made mayonnaise, to top the Kartoffelsalat was absolutely delicious, ambrosia!

She always used a very small amount of sugar, to give the final "kick" into the Kartoffelsalat, after resting for 24 hours in the fridge, the Salat was served, her best Kartoffelsalat she prepared from the so called "New Potatoes", the very little potatos. This was heaven on earth!

Is Kartoffelsalat popular in the USA, do you like it...?

    Und Zoo Michael where is Grossmutter Alberta's recipe ?????  Did she add anything but the sugar and mayo?  I would love to make it.

    Typical German Kartoffelsalat is served everywhere here in Germany, but the "quality" ranges from 0 - 10, the very best Kartoffelsalat over here is prepared the "day before", and served within 24 hours, and then the remain should be thrown away...

    The so called "Kartoffelsalat", sold in the chains, and food markets, durable sometimes for 3-4 weeks, that is a very lousy stuff, very nasty, nothing to enjoy!

    Kartoffelsalat must be fresh, maximal not older than 2 days, to enjoy it, the rest is for the dustbin...

    Well, I do not have the recipe from Grandma Alberta, sorry...

    But I remember, the most important ingredient was the home-made mayonnaise, spiced up with several "secrets", like just a touch of sugar, and just a knife-point of very hot trad.  german Senf mustard...

    Grandma Alberta used always "Cilena" Potatoes, a "hartkochende" (Sorry, no translation...)  sort, "Cilena is av. all over here in Germany, I like the Cilena potatoes very much, just, as "potatoes in the skin", just add some salted butter, and you are in heaven...!!!

    I'm a bit confused - I've always thought Kartoffelsalat was the potato dish with bacon, onions, flour, vinegar, sugar and caraway seeds?
      
    So, Michael, this one has homemade mayonnaise and is served cold?

    Also, I recall when I lived in Germany having a dish we just called German Salad that was cabbage, onions and green beans with a light dressing that was very good.  Is this familiar to you?

    Kartoffelsalat differs very much in Germany, here in Northern Gemany it is served "cold", for example in bavaria, it is will be served sometimes "lauwarm" (lukewarm...), together with the trad. bavarian so called "Weisswurst", and sweet bavarian mustard.  

    We prefer the trad. "cold" version, over here in Northern Germany.

    Versions of Kartoffelsalat are sold here as 'German Potato Salad'.

    We have that nasty stuff here, too. In the New York city area, the biggest selling brands are Blue Ridge Farms and Sally Sherman.  (Neither company has a working web site at present.) There are also larger brands, such as Reser's and Hans Kissle:

    Most potato salad made here has a lot of Mayonnaise in it. Many people make their own potato salad, which only keeps a few days because it has no preservatives in it. Here is the classic recipe published by Hellmann's, the biggest selling brand (owned by Unilever) of Mayonnaise:

    Potato salad is sold in most supermarkets, and many restaurants in the USA serve potato sald as a side dish.

    We have missionaries in our extended family, and they brought a young German couple to our family reunion this year. I tried to ask the wife if you have German Potato Salad there & she said it had mayonnaise.

    My mother & my aunt make the best German Potato salad, I will see if I can snake a recipe out of her.

    BTW...

    It needs very special brands of potatoes, to perpare a typ. german "Kartoffelsalat", the "hard" ones, which are not offered over there...
