 Keeping burners on hot dog cart lit

Keeping burners on hot dog cart lit Tue, 02/19/08 12:26 AM (permalink)
Does anyone have suggestions on how I can keep the burners on my hot dog cart from going out, when I turn the fire down. I would like to keep the hot dogs warm, whenever I turn the flame down it goes out. If I dont lower the flame the steam pans have soot on the bottom and start to look old, even though they are not. Any suggestions?

      I find that if there are vents in the front of the burners that on a windy day they some times blow out. I remedy this by placing a sheet of foil inside the brnuer box in between the vent and burner. It does not effect the temp and still vents easily.
      Another reason the burner may not light is if you have a thermal coupling (ask a plumber if you dont know what this is) it is very similar to the set up in a hot water heater. It is a long rod about 2 inches or so near the flame if it is black sand it with sand paper to get back to bare metal then try to relight. If this does not work take it out (one nut at the end of the long tubing) bring it to a lowes or whatever and go to plumbing section.

        I'll ask a moderator to move this to the Restaurant Pros Area. But when your reporting soot on the bottom of your steam pan, your have a Air/Gas mixture problem going on. Propane burns clean. You either have dirt in the venturi or the air gap between the 2 is being blocked. Also check to make sure all the burner holes are 'passing gas'. A simple cleaning should solve your problem.
