Kettle Grill Temps

Question for all you "Q" experts - I have a kettle grill and have been experimenting with ribs. It only takes about an 1 1/2 on the kettle. The temp stays around 325-350. How can I get the temp lower so I can cook them longer without burning the outside? Help.

By closing the air vents on the bottom you can restrict the airflow and thus starve the fuel of oxygen thus lowering the burn temp. The Weber silver is pretty good at this. You will need to experiment to find where to set the vents at. I use a probe therometer pushed thru a small potato to track the temp at meat level. If you close the vent all the way then you'll kill it, try starting about 80%. Slow cooked BBQ ribs should take 4 - 6 hours. MikeS.

I've got both a Weber and a smoker; I do find it hard to make the Weber consistent for 4-6 hours. 2-3 is about it. Beyond that, I'll use the smoker.

To do q on a Weber I would make three purchases and if we're talking ribs, four. I would buy the grill (the actual grill surface) w/ the flip up panels on each side for adding charcoal during the smoking, a water pan and these small "ears" that hold back the charcoal. Doing ribs? Get a rib rack that holds the ribs at an angle. You can q more ribs and I think they come out better.

Haven't a clue. I have this Italian spyware virus right now. Because it is from Italy the USA virus programs are failing to help, at least according to the virus program help departments. Every fifiteen minutes the Italian Google site pops up. I have an old version of IE but the virus is preventing me from upgrading. Then the fun part...once an hour an Italian porn site pops up. Back to the original topic...Weber kettles are not the best to use for making q but w/ a bit of attention it comes out pretty good.
