Kielbasa & Ham Loaf

Roadfood Members Was wondering if anyone could point me in the right direction with getting two recipes one for Ham Loaf and one for Kielbasa Loaf Any help or info would be greatly appreciated Thanks in advance Boomer

Here's an easy one, Boomer. I've never had a loaf made with kielbasa but I imagine you'd just grind it up and make it like a meat loaf. This makes a somewhat crumbly loaf and is easy to make with leftover ham scraps. I usually add a dash or two of worcestershire sauce. HAM LOAF (serves 6) 3 cups minced cooked ham 1 small onion, very finely chopped 1/2 tsp. dried parsley flakes or 1/2 Tbs. chopped fresh parsley 2 eggs, well beaten 1/4 tsp. pepper 1 Tbs. prepared mustard 1/2 cup dried breadcrumbs 1 cup milk, divided Combine all ingredients but use 3/4 cup of the milk and mix thoroughly in a large bowl. Let sit in bowl for 15 minutes. Add the additional 1/4 cup of milk if mixture seems dry. Pack into greased loaf pan. Can be garnished with pineapple slices on top. Bake 40 to 45 minutes at 350 degrees. A half pound of ground pork or sausage can be added if a firmer loaf is desired.

Here is the link to my moms recipe. Notice hers has ground beef and sausage. http://www.roadfood.com/Forums/topic.asp?TOPIC_ID=22466&SearchTerms=ham,loaf Evalyn's Ham Loaf ----------------- 2 lbs cooked ham (ground) 1 lb lean ground beef 1/2 lb bulk pork sausage 1 1/2 cup tomato juice 2 cups soft breadcrumbs 1/2 cup finely chopped celery 1 medium onion, minced 2 eggs well beaten 1 tsp pepper 1/4 cup & 2 tbs firmly packed brown sugar 1/2 cup catsup 1 tsp dry mustard 1/2 tsp ground nutmeg Combine 1st 9 ingredients... Mix well. Spread into 2 QT greased cassarole dish. Combine sugar, catsup, mustard and nutmeg. Mix well. Spread over meat misture. Set cassarole dish into shallow pan of water and bake at 350 for 1 1/2 hour. Creamy Mustard Sauce.. 1 cup mayo 1/4 cup prepared mustard 2 cups whipped cream (that seems to be optional according to the way mom wrote the recipe)

I haven't eaten a Polish ham and kielbasa loaf. It must not be popular in Chicago. By the way, http://www.polishbuzz.com/ has some nice Polish kielbasa recipes. Happy eating.
