When I thought meat was the source of my gout problems I went vegetarian for a couple of months. One dish that I made up on the fly was a King Ranch Bean Casserole. I used leftover pot beans instead of the chicken and an onion and green chile white sauce for the soups. It was so good that my wife said "if all vegitarian foods tasted like this I won't miss eating meat".

Regrettably I didn't take notes and could never duplicate it again.

    The chicken ranch is great. My Mother made this growing up and it was always a favorite of my family. She made it with velvetta cheese and a medium sweet onion chopped, and left out the canned corn!! It is delicious!!!
