Kitchenaide Mixer Recipes

I'm a displaced Aleswench....staying at my mom & dad's house for 3 weeks while they trek to and from Arizona (Roadfood list in hand). I am watching their 2 very yappy Yorkies - cute as buttons, but I am about ready to rip their "barkers" out. There was a rabbit on the front lawn this morning and I was convinced it was actually Godzilla they way they carried on. My God....anyway - Bob stayed the weekend with me, but had to leave to tend to our mutt, so now, sigh....all alone in this big house with nothing really to do. So, I think I'll do what every roadfood lovin' displaced lonely wife would do.... cook! I forgot all about my big ol'Kitchen Aide Mixer, stored here because we just don't have the room for it at our house. I cleaned it all up...now what? I need to make something that freezes well and takes up alot of time to make - the sky's the limit. Anything goes. Any suggestions?? Sue

My "freezes well" staple is banana nut bread (or any other nut bread). Unfortunately, it doesn't take long to make: A favorite banana nut bread recipe is also a simple one. Scroll down for more banana bread recipes, including several with other nuts and fruits. • 1 cup sugar • 1/2 cup shortening (I use Smart Balance or butter) • 2 eggs • 2 cups flour • 1/2 cup chopped walnuts • 1 teaspoon baking soda • 3 soft, ripe bananas, mashed Cream sugar and shortening; add eggs, flour, soda, bananas, and chopped nuts. Pour banana bread batter into 1 greased and floured loaf pan; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 1 loaf.

Here's chocolate nut bread--takes a bit longer: Chocolate Nut Bread Recipe Serves/Makes:3 loaves • 3 squares unsweetened chocolate • 1/2 cup butter softened • 3 cups all-purpose flour • 1 teaspoon baking powder • 1/2 teaspoon baking soda • 1 teaspoon salt • 1 cup sugar • 2 eggs slightly beaten • 1 cup milk • 2 teaspoons vanilla • 1/2 cup chopped nuts (I like pecans) • 1 cup powdered sugar • milk Melt together the chocolate and butter. Stir until smooth. Cool. Mix the flour, baking powder, salt and soda. In a large bowl beat the sugar, eggs, 1 cup of milk and vanilla with a wooden spoon until blended. Stir in the dry ingredients until blended. Add the chocolate mixture stirring until smooth. Fold in nuts. Divide the batter in to three small greased loaf pans. Bake at 350 degrees for 40 to 45 minutes. Cool in the pans 5 minutes. Remove from the pans and cool completely. Make a glaze by combining powdered sugar and a small amount of milk. Drizzle over the tops of the loaves. If you are going to freeze, I'd skip the glaze. Do it when you use them or not at all. Just dust them with powdered sugar before serving.

Why not mix up some pizza dough... Mixing time is quick, but then there's the wait for the dough to rise, then assy. and finally the cooking... Might burn up a couple hours of your day. Another idea might be to make some bread to go along with the hassenfeffer you have a fresh supply of.. Could share it with the Yorkies!

aleswench, didn't you save the owner's manual with the recipes? Maybe you can get a replacement. They show you how to do bread dough in the Kitchenaid, which will do 2 loaves of bread at a time. Their recipe for honey oatmeal bread is the best. You are going to take your mixer home with you, aren't you? I can't imagine hiding mine away in a distant location.

I got a great deal on one years ago and it took up most of my SF kitchen counter space until I brought it down to AZ where I have room for it. I miss it, sometimes, but city kitchens like mine are just too small. I do have a KitchenAid hand mixer in SF, though.

Thanks! BT - doing the banana bread recipe today - and a batch dough for the Thumbprint cookies I posted in the RF cookbook. And a buttermilk pie recipe I saw. I want to experiment with crust. M.G. I'll look for that recipe- I also dug out my bread machine that was stored here as well. Maybe I can adapt a honey oatmeal bread for that and just go positively gadget giddy!! And Uncle Vic - pizza will be on the menu one night this week thanks to your suggestion. I may even attempt the homemade mozzerella cheese suggested on another thread. Dear Lord, what do I do at home??-I have all this time on my hands! I'll guess I'll need some of that time for the clean up Starting the food orgy now - and just in time - sounds like "Bugs" is back - they are positively doing flips in the bay window   HOLY CROW or cow...or what the? Now the Doberman next door is piping in. I may need to add a glass of merlot in the mix. If anyone has any other suggestions, I'm all for it - I have three weeks of loneliness - but hey, we'll have one well stocked freezer!!

Hmmm, lonely wild woman, plus freezer, naturally equals one thing: ENDLESS COOKIE DOUGH!!!! Just about any raw dough will freeze well and you have cookies on demand. They don't have to be "freezer cookies". This is a recipe for chocolate chip cookie bars that will assuage your loneliness and make you grateful there is no one there to put their grubby paws on your cookies! CHOCOLATE CHIP BARS 1 1/3 cup shortening (my mom used Crisco...I usually substitute half butter) 3/4 cup white sugar 3/4 cup brown sugar 2 teaspoons vanilla 2 eggs 3 1/4 cups flour 1 teaspoon baking soda 1 teaspoon salt 6 ounces chocolate chips Preheat oven to 375 degrees. Cream together shortening and sugars. Add vanilla and eggs. Mix. Mix together flour, baking soda and salt. Slowly add dry ingredients to mixer. Mix. Stir in chocolate chips. Spread into a large rectangular pan and bake tor about 20 minutes or until done. I usually add walnuts or pecans, or if I'm really wild...M&Ms..look out, boys!!!

Dang...ran out of butter....cookies will be on the agenda tomorrow - I'll weigh 300 pounds by the time I get home. On a side note, it's very interesting coming back home. I grew up in a much more urban town in NJ, and moved north after we were married. It's very strange ....I don't know if I could ever go back. No bears or wild turkeys...or woodpeckers...just cars...and lots of people...LOTS of people. So much has been built up - Walgreens, CVS, Eckhards - how many drug stores does one need in a 2 mile radius????? I went to the supermarket Sunday and actually had to leave- I couldn't take it! Even my old hang outs are not the same. I guess you can never go back. The good thing is that my asthma/allergies are much better. We were actually thinking of moving down to this area again because of them, but I don't think I could stand it unless I created a backyard hideaway. And forget that because you have to practically be a millionaire to live in Bergen County, NJ. Sorry for the rant.....I just miss my Bob and MY dog!!! And the bears...which are just starting to poke out from hibernation...
