Kowalski natural casing dogs.

I recently started buying Kowalski n/c dogs 8 to 1, pre-packaged and they are great dogs. Yesterday I was in another town and stopped by a local butcher. He had N/C dogs in his case and were not packaged. I inquired and was told they were also Kowalski as well. These dogs seemed a little bit darker on the skin though. I purchased a pound and took them home. Last night I opened them up and the smoky smell was  unbelievable. I cooked them up and they were not just great, they were magnificent. They seemed to have a better flavor and color. The packaged Kowalskis have more of a pinkish color. I am curious if maybe Kowalski uses different formulations? Anyone have any ideas? Thanks.

My guess would be that the bulk dogs may have spent some time in a smoker or had a smoke additive added to them.
Or they just discolored lying in the case for several months!!!!

I'm no professional but I grew up 2 blocks from Kowalski's one-and-only factory and have been eating their dogs all my 50+ years.  I've never seen them darker colored or smoky flavored.  They are always bright pink and taste like plain bologna.  Maybe your butcher did something to them but they didn't leave the factory like that.

Pre packaged, retail product is formulated differently from food service product and this will cause a difference in taste and appearance. Your butcher is selling the food service product, which should be better than the pre packaged retail product.

Thanks for the replies guys. I went in the other day and did a side by side comparison. The ones that I picked up at the butcher are definately different but in a great way!
