Kulfi

How is the indian kulfi ice-cream differs from western ice-cream including the gelato?

    Frm my experience it is a lot sweeter than most ice creams, custards and gelatos. Used sweetened condensed milk as well as sugar. Good unique flavor of cardamom and pistachio though.

    Kulfi tends to have an "icier" texture, if you follow me. It's not nearly as smooth as either ice cream or gelato. And as renfrew says, it's often *extremely* sweet.

    Just had an order last night at "Bombay Gardens" local restaurant in Chelsea area of NYC. It also is heavier, denser and thickerthan regualr ice cream. Rather distinctive. Like imagine hard frozen thick cream. Came in a small "disc" size, cut into 8 small pieces. Pistachio flavor, sprinkled with nuts around it. Very tasty.

    They also have delicious "designer" versions of kulfi at "Tabla", an "upscale" (Danny Meyers, I believe) restaurant off Madison Park in NYC.
