The year of the ox.
This is a cold appetizer, salty, asian, something different. I can only eat 1, here is a recipe for 3:
3 hard boiled eggs boiled 6 minutes peeled
1/4 cup soy sauce
2 slices ginger (or 1/2 tsp dried)
3 tbs brown sugar
1/2 stick cinnamon
1/2 star anise
4 black peppercorns
2 cloves
1 tsp sesame oil
 
Boil eggs, peel.
Meanwhile, simmer soy, sugar, cinnamon stick, ginger, anise, peppercorns, cloves.
Place eggs in soy bath.
Carefully simmer on low for 20 minutes, turning eggs.
Sauce will be thick, pour all into bowl. Add sesame oil. Let cool, refrigerate up to a day.
Discard marinade, place halved eggs on lettuce, enjoy the new year.

      Yes they will be a bit tough, when its cold its hard to notice.  Its hard to boil less than 6 minutes and peel perfectly, at least for me. Some don't even do that, some boil 2 minutes, crack the shell on the egg, place egg in soy bath at that point. When you remove the shell, its very lovely and cracked and a bit softer and color deeper.  Many different ways to make soy sauce eggs.  You can add a bit of water too. Instead of all those spices, just use ginger and a tsp of Chinese 5 spice too.
