My girlfriend and I took the Long Island railroad to Bellmore on Sunday for a barbeque at the home of our friends, Melissa and Larry. They been here on Roadfood before in my July 4th report when Larry made some killer pulled pork and baby back ribs! It turned out to be a beautiful day with temps in the 80s and the pool and I were bosom buddies!
Larry's 5 hour smoked brisket. I'm not sure what he used for the rub, but I'm pretty sure salt, pepper and brown sugar were in the mix. I think he also mopped it a bit with some of his Carolina style vinegar sauce.
Homemade guacamole. I hated guacamole for years as every version I had tried was pasty and over processed. This stuff was killer! Smooth, but with some nice chunks of avocado throughout and he used red jalapenos instead of green which gave it a very spicy kick. Addictive!

Larry made these again (a HUGE hit as always!) with smoked gouda, brown sugar, and wrapped in bacon. Amazing as always and very hot time! I made sure I had fluids nearby as I was good for about 4 or 5 of them and my mouth paid the price. But so worth it!
I had Larry press down on this to show the juices coming out as I sliced it. I used an electric knife and it just glided through that beef like it was butter.
I was thrilled when Larry asked me if I would slice the brisket! Check out that lovely bark!!
Larry really outdid himself on this one!! A wicked and most tasty crust, great smoke penetration (take a gander at the smoke ring), incredibly pull apart tender, and very moist. Sadly, some of the crusty, chewy ends didn't make it to our friends. Quality control...it served the greater good!

...this melange of grilled greatness! Lots of char, sweet and light. A nice, filling alternative if you're not into brisket (and in addition to it for me!)
