Laws for Mobile Food Unit

Anyone look at this for me? Section B down towards the end it looks like electric cart is what's required and no generator allowed. Is this what it is telling me. The cord has to be 5 feet above the head and connect somewhere. If your in a big parking lot,I don't think you could pull something like this off unless you can attach directly to pole. Water supply. The carts I see advertised are only 7 gallon units, I think these people want 30. These laws look tuff, anyone agree? It is recommended that a minimum sized 30-gallon potable water tank be installed. The tank’s size requirement will be determined during the plan review process based on the menu, sink dimension, and operating hours. ELECTRICAL GENERATOR Every mobile food unit must have sole access to a generator for its basic electrical needs or for times of emergencs. Yes they suck big time find another town,county, or state.

I don’t see these requirements apply to food carts at all. Section 3 defines requirements for walls, ceilings and floors and section 20 requires all food operations to be from the INSIDE of the unit. This is the same for all three parts of the code/law. You need to check Tennessee Department of Health’s Food Service Establishment for Mobile Food Units, Chapter 1200-23-1-.02, (12) or Temporary Food Service, Chapter 1200-23-1-.02, (13) for requirements for Food Carts. It looks like fully enclosed mobile food units are required and food carts are not allowed.

Part B does apply to Mobile food units and it says it at the top of the sheet, and it confuses me because all it talks about in the part towards the end is electrical. I can find that hard to comply with if you are in a large parking lot, how are you going to put a electrical cord, 5 feet above you and plug it in somewhere unless of course you can do it at the pole, IDK. Just looking for some clarification, if anyone can help.

Question: Are you planning to use an open cart (hot dog type cart) or a concession trailer? You stated cart in your first post and I assumed it was the standard type of open hot dog type cart. Parts A, B & C are all labeled as Mobile Food Est. Part B is for those Food services that work from as single location, but move off site at the end of each day, and returns to the same location the next work day as stated in the title. Parts A, B, & C describes mobile concession trailers, NOT an open food cart. See section 3 & 20. of each part, it’s requirements are the same.
