The bigger grocers in my area sell these.  Its a 6oz filet wrapped in bacon and cryovaced.  They also offer a erzats version-a bacon wrapped chuck tender.  Tonite we had what was supposed to be the real deal(or so the label said).  The meat was tough and chewy.  i couldnt believe it as we have had them before.  Not awesome but worthwhile when on sale for 2/$1.  The one I had tonite was almost like chewing buble gum!

Tried one once but wasn’t expecting much. Low and behold t’was like chewing on shoe leather.

I have had much better experiences with the Ledbetter filets. Maybe it is the cooking method.
I sear them quickly in a very hot black iron skillet and cook until barely not raw.
Remove, deglaze the pan with red wine, butter and worchestershire. Pour over the filets.
I have not had a problem with toughness.

We have gottent them occassionally for years and they were always at least acceptable.  this is the second time in a row Ive had a problem.
i used yo really enjoy the "filet of sirlion" at Aldi.  tey were almost fork tender.  I would just sear them so they were almost Black and Blue.  the last few times they had a new brand and they were cut differently with a large piece if sliner skin in the middle.  The used to use a ball tip.  Its now some designer Chuck clone.

Sorry.  It was 2 for 4 bux.  Im still not well, be kind for a week or so.  I hate run afoul of the RFDL(Roadfood defense league).
The normal price is 2/$7 and the do a sale at the end of the month.  it might be because they are going out of date.  Could make a difference in flavor but shouldnt affect the tenderness.
