Well, here's my quandry. What with living in Japan, there's not a lot of corn starch to be had. I've been asked to teach Lemon Meringue Pie to a group and only have access to 'katakuriko', which I am 99% sure is potato starch. Is that okay or will i get a different result?

Potato starch is supposed to be a substitute for corn starch but I have never tried it.

I would test it with local ingredients before I taught the class. I would also bring the actual packages of what I used to the class. Having been in similar social situations in Japan, I can tell you that it is easy to get confused. You can save a lot of time by being prepared.
