Any good recipes for lentils? Esp. appreciated - lentil salads, but anything will do...

i posted a recipe for Lebanese Lemon Lentil soup on Friday. Check it out. It was very very good. As for a salad: I usually use chickpeas for this, but I wonder if lentils will work. cooked lentils, canned tuna in olive oil, some minced capers, thinly sliced red onion, cubed emmenthaler cheese or feta, chopped fresh Italian parsley, a good squeeze lemon, olive oil, salt, b. pepper, and herbs to your liking, or dressed greek or italian style dressing. Let marinate for a bit.

I love lentils!!! I make a salad very similar to analei's with lentils. Sorry I don't have measurements. I do it by looks and taste. I use lentils, finely chopped garlic (I like lots of garlic), kosher salt, black pepper, thinly sliced onions, grape tomatoes sliced in half, chopped fresh cilantro or basil (whichever I'm in the mood for), fresh chopped parsley, good olive oil, and balsamic vinegar. Stir to combine all together and refrigerate for a few hours to let the flavors come together. This is my second favorite salad, with my first being a caprese salad. If you get a chance to make it I hope you like it!!!

My wife makes a superb Lentil soup,Italian style...cloned from the Carrabba's soup...she adds crumbled cooked Italian sausage to the soup...and some hot pepper flakes to give it heat(more or less to taste)and lets it simmer nice and long. On a cold day, add Italian bread ,EVOO and dipping spices and you've got a hell of a meal!!!

Only delicious lentil soup from here. A little texture adding garlic onions and celery as well as what you find. Season well while cooking.

When I have leftover ham, sometimes I make this casserole: HAM AND LENTIL CASSEROLE 2 cups dry lentils 2 2/3 cups chicken or ham broth 8 oz. cooked ham, cubed 1 medium onion, chopped 1 clove garlic, chopped 1 Tbs. olive oil 1 medium tomato, chopped 1 Tbs. molasses 1/2 tsp dry mustard 1/2 tsp. soy sauce Salt and pepper to taste Clean lentils. Combine the lentils and broth in a 2 quart saucepan. Bring to a boil; reduce heat. Cover and simmer for 30 minutes. Meanwhile, sauté onion and garlic in olive oil until soft. When lentils are cooked but not mushy, stir remaining ingredients into the lentil mixture, stir gently to combine, and spoon into a 1 1/2 quart casserole dish. Cover and bake for 30 minutes. 6 servings. BARLEY-LENTIL SOUP Put in 3 quart pot: 1 large or 2 small carrots, sliced 1 medium to large onion, chopped 1 or 2 stalks sliced celery 1 peeled garlic clove stuck on a toothpick 1 large tomato, peeled, seeded and chopped or ½ can of diced tomatoes 1 can beef broth 1 vegetable bouillon cube ½ cup of beer (optional but my secret ingredient) water to fill pot about ¾ full salt, pepper to taste and a dash of Worcestershire sauce You can also add chopped peppers if you like a spicier soup or some diced soaked dried mushrooms When liquid is boiling, add: 1 cup lentils ¼ cup of barley Turn heat down to a fast simmer (medium-low on my stove), cover, and cook until barley is done, stirring occasionally and adding more hot water if needed. Then add some sliced mushrooms. You can also add some chopped spinach and cook about 10 more minutes. Stir in chopped fresh parsley when soup is done.

I like it in rice, sometimes I add some spinach. Boil/cook up your lentils first for 15 minutes, then add rice and whatever else into it. Here is a delicious recipe, Mujadarrah, rice with lentils and onions you will enjoy.
