jaja, thanks all, yeah, the Frankenstien has had some good reviews, about the chicken, yes, its a island thing, although I dont jerk the chicken, since my chili is already spicy, I just shred the chicken and add my own herbs and spices just to up it up a notch.
Here like in Hawaii, we love Spam. I will introduce a new sandwich.
The Spaminator lol. Sliced spam grilled to a nice brown and crunchy and fixens like the Frankenstein :)
I'm going Bust or Broke lol

That reminds me of spam mushubi...I wonder if that would do well here in Charleston...if not I could just eat it! Mmm the holy trinity of rice, seaweed, and spam!

I was really expecting to see more pictures.  Very nice rigs Dom! Can everyone  post what their cart is as well (manufacturer & model too)? I can't really see yours superdogpr.

Is that a pain to enclose the entire cart? Are you having that done local or when you order the cart? Is it expensive? Cost to enclose the cart?

Our cart has changed slightly over time. This is a self designed/built/remodeled food cart. It was built on a flat bed cargo trailer that we had and cut it down right behind the wheels. We had to remove the wheelwells and rebuild them. We used to remodel homes for a living. We just can't leave anything alone for very long. We are always looking for ways to improve or make things easier for us. Our food cart was designed and built to make it easy for a single person to operate but two can fit in for event so one is dealing with customers (and passing out the drinks/chips) and the other can do nothing but make sandwiches.
 
When we started out in NC (2009)

 
The umbrella couldn't hold up to the Central NM wind. I got the idea for the curved roof when I happened to see a home built truck topper with a curved roof. I have always liked Victorians and Gypsy Vardos so the food cart evolved with those influences in mind. (NM 2009)


 
After complying with Corpus Christi TX requirements (TX 2010)

 
Currently in Central NM. We have removed the large front sign (big yellow & red thing) and will be replacing it with a different sign.since our menu has changed and we no longer sell hot dogs. Because we installed an Air conditioner, the window screens have from TX have been replaced with plexiglass. The side windows can have the plexi removed and the screens popped back in place for mild days. The plexi helps keep the heat in from the wall-mounted LP heater. (NM 2011)

I am looking for a good Polish sausage bun they deserve more then a hotdog bun I saw an image on the internet of what looked equal to the the everything bagel.......any suggestions?

David splits the Kielbasa in half lengthwise, sears it on both sides and serves it on a toasted Kaiser bun. I eat Kielbasa with raw sweet onions, sauerkraut and a mix of brown & yellow mustard. Toasting the bun helps it hold up to the kraut. Folks who see me eat mine, usually ask for it the same way.

Do you have a sneeze guard. Our local DHEC representative says I have to have a pexiglass sneeze guard on my cart before I can get it inspected.

Yeah. Both my carts have sneeze guards. Any hot dog cart in SC needs one.

Domromer, I just realized my family and I bought dogs from you a day after New Years day when we were visiting relatives from Bluffton. Pretty good, didn't kill me, of course that was after a couple Wet Willies!

My wife thinks I'm the only person on Earth that likes "SPAM." She doesn't know it but I LOVE "SPAM." Plain bread, toast bread, mustard or mayo, mustard and mayo. SPAM, man that living
 
I feel sorry for folks who don't like spam. Can you imagine how bad their taste buds must be messed up? Pity, pity!

this is the best I can do for now, no pictures. My brand of cart is just like the picture but I have a couple of signs just like the link below velcroed to the cart, and a sidewalk sign, and I'm a lot better looking then the sign and cart put together.
