I can NOT imagine anyone actually grinding up "MAINE LOBSTA"--surely they MUST be using them big crayfish from down there in that fresh water country!!!--or at least them clawless things from the caribe---good--but NOT lobsta!!!!

I've made lobster sausages before. Usually mixed with shrimp to cut the cost, lightly sauted celery, onion in olive oil, some homemade breadcrumbs, fresh chives and flat leaf parsley, hand stuffed into a casing to preserve chunks. Given a gentle simmer then finished off quickly on a grill for a touch of color. Seafood sausage is maybe more common on the west coast and down through Baja.

Wow Toad, that sounds great! I had no idea about this west coast revolution. What do you serve with it? And... where do you find those casings? Tiki, hard to find a good lobster roll here in Texas. I would sure like to try Toad's sausage. I think it is the waste of lobster that concerns you? Let's try to keep an open mind though. Hey, there are all kinds of sausages so why not seafood. Joe

Hey, there are all kinds of sausages so why not seafood. Joe Seafood sausage is not limited to the west coast -- its been the signature first course at Chanterelle in NYC for 30 years. Not at all difficult to make. Grind shrimp and sole or flounder in a food processor with an egg white or two to make a mousse (basically the same as quenelles de brochet) then season with finely chopped parsley and shallot (sweat the shallot in butter first), salt & white pepper. Then add diced scallops and/or lobster and finely diced butter (freeze it first, then dice.) Stuff into sausage casing (any good butcher shop should have it, or you can find online), poach gently then grill. Careful with the poaching -- if you overdo it, they tend to split. Serve with a lemon beurre blanc and a sprig of chervil. Drink a nice cold white Burgundy.

Joe Actually---i LOVE seafood sausage---but their is so little REAL Maine Lobster and the flavor is so sublime that it really seems to be a huge waste when a GREAT sausage can be made with so many other forms of "lobster"---ie---Rock lobsters and crayfish and fresh waster lobster---that is MUCH more abundant--actually a favorite of mine is one made with abalone scraps and sea scallops!!-and them there is also the "Hot Dog" factor---i LOVE good hot dogs---but no matter how you slice it--to me--hot dogs are pork or beef!!!--seafood is "sausage--and turkey hot dogs are just an abomination!--Sorry if i seem a bit opinionated---but I am that way i guess and having grown up in Lobster country i admit to being a purist about it---Lobster and steamers is --to me--the absolute ultimae meal!!!

So Tiki, do you like that one thing that is still on my "still trying to acquire a taste for" list... that green tomale stuff? I bet many of the folks posting on this thread would, if they tried it, would need to add this to their list. I bet they would rather eat a beet than that stuff. Maybe the lobster sausage, hot dog deals, need a different name? That way they would not be compared to ether? I wouldn't have a clue what else to call them though. Lobster Roll is already taken. A Lobster Hot Dog in a natural casing sounds excellent. It probubly has little or no chance of drying out which can happen to lobster. I would try one for sure. Dont think I would top it with anything.I think I might saute it in some clairfied butter. I think I will make some...Russ

When I read this, I actually looked out the window to check the skies for signs of the Apocalypse. I think I'd rather pick over a 3/4 lb "canner lobster" for the junk bits than have a lobster hot dog. I'd try one though - just because I believe in trying everything once. As far as tomalley goes, I just don't believe it's safe to eat anymore. It likely was, "a long time ago in a galaxy far, far away" but when you consider its function in a lobster's body, I wouldn't touch it.

i have one of these dogs at least once a year. not a big fan of lobster but these dogs are delicious!!!!! they ooze butter with every bite. i haven't had many lobster rolls that drip with butter and flavor. lobster is expensive and very flavorful so restaurant owners sometime skimp on the portions to make money. this dog is packed with as much meat as the casing will hold. as far as topping for it, sure there are lots of choices, but the "plain jane" is the way to go. if you like corn dogs, also awesome. i say go there and try one. while you're there, get a couple of other gourmet dogs they offer. that's really what makes me go back. and here and there, i feel like a lobster dog
