Looking for Kebob recipes

We are having a dinner this weekend and wanting to serve Kebobs. Does anyone have a good recipe to share. Thanks!

I have made kabobs longer than I can remember. I set out bowls or trays of fresh meats (usually beef chunks) and produce (onion, peppers, mushrooms, small tomatoes, squash, etc.) and let folks 'build' their own. The possibilites are endless.. Brush with olive oil, set out Kosher salt and pepper mill.

I go along with what Scarlett says. We like to do potatoes too. I would suggest any "firm" vegetable like carrots, potatoes, etc.. you parboil them just enough to soften them up a little. If not, they will not cook through before the other ingredients are ready. Also, with these type of vegetables, if you push them on the blunt end of the skewer they won't split like they do when you push them on the sharp end. If you are using the bamboo skewers, soak them for a while before using to keep the exposed ends from burning.

We always make a popular one with lemon marinated chicken, teriaki shrimp, red onion, pineapple and peppers. They're a little different and good. Make sure you don't over-cook them
