From the Urban Dictionary: 1. horseshoe sandwich an open-face sandwich that originates Springfield Illinois. It consists of Texas toast, covered in meat (usually beef), freedom (french) fries and then cheese sauce (traditionally Welsh Rarebit cheese sauce but chedder or american cheese sauce is just as good) The fries and cheese layeres can be switched in order as they usually ooze togethor anyway.

nikim, they are fantastic. I grew up in Springfield, IL and my mother taught all of us kids just how to make these. If you ever should be through there, there is a place on North Grand. Ritz's, his are great. I make them every couple of months (since I think they are kinda fattening) I usually use a nice hamburger steak or ham on toast, lots of french fries and my secret cheese sauce. Really it has taken me years to come up with the flavor of the sauce we all like.
