Looking for a fried recipe..... Wed, 08/24/05 1:32 PM (permalink)
Okay..I am not sure what to call it that I am looking for, so I am going to try and describe it the best way I can.

Back in '99 I was in a little bar in Breckenridge, Colorado I think. Anyway, in the bar the bartender was serving a type of fried cracker that was shaped alot like a "tostido" chip. Triangular. BUT! The texture was almost identical to what taco salad bowls are made like at Taco Bell.....but even lighter than that.

Does anyone know what recipe is involved in making something like this and what it may be called if it has a name? I never asked the barkeep.....I never thought I would want it later on.

Anyone who knows....I sure would like some help on this.

Thanks!

Just cut up a flour shell (burrito) into 1/8ths (triangles) and toss in the deep fryer..

This is just a guess. I suspect the "chip" was made by frying flour tortillas as opposed to corn tortillas, hence the lighter texture.

It's possible. I have no clue. They were being served in place of peanuts. I ate a ton of them. But their flavor reminded me most of the taco salad shells. In taste that is.

I am sure that it is fresh fried flour tortilla - sounds exactly as you described. In my opinion it's worth it - salt them right out of the fryer. Or for a different treat sprinkle them with cinnamon sugar and serve with ice cream. It's a treat!

I was at a chinese restaurant buffet and I can tell you that the texture and taste is almost identical to those fried flat wide noodles that are on buffets near the soups. I use those noodles when I have egg drop soup and if I knew how to make those then that would answer my first question. So if anyone knows.....please I would appreciate it.

And I tried googling the noodle recipe but it gave me recipes for all the "wet" and "soft" noodles. Not the crisp fried ones served in buffets.

I can't be sure, but those fried "flat wide noodles" on Chinese buffets near the soups are likely strips cut from wonton wrappers and then fried. On our Chinese buffet that I like best, they have broken pieces of fried wonton (labeled as such) that you can use like crackers in your soup. I suspect that these are from wonton wrappers, crab Rangoon wrappers and egg roll wrappers that got broken in the frying process.

The chinese soup noodles are definately fried wonton wrappers cut and deep fried.

I got to thinking about it after I answered last and thought the rangoon and egg roll wrappers were too thick for the noodles...but now spring roll wraps would be a possibility.

Johns72604...do you know this for sure that it is wonton wrappers?
