 Looking for a recipe for Pumpkin Bread without Eggs

Looking for a recipe for Pumpkin Bread without Eggs Thu, 09/17/09 2:16 PM (permalink)
This year I would like to attempt to make pumpkin bread using fresh pumpkin. I also want to be able to find a good recipe that uses all the spices but NO EGGS.

Also, I am wondering about how to store unused pumpkin to be used later. I would think freezing, but not sure.

If anyone has a good recipe and some advice on storing I would greatly appreciate it.

I also notice that there are very small pumpkins for sale this year and I was wondering what the difference is between the much smaller pumpkins and the normal sized?

    Vegan style, eggless, without dairy?  I'm sure you will find it out there, I don't have a recipe unfortunately.  I have a recipe for egg whites only if you want it light.
    All the spices,.... what is that.  All I use is cinnamon.  We are not making a pie here, but a bread.
    All you need is one cup of pumpkin puree for one loaf of bread.  Buy a small "sugar pumpkin", peel it, clean it, put it in a pot with a little water and cook till soft.  Mash it up, cool it, save one cup for your bread.  Freeze the rest, it will be fine.
    Let me know if you want the recipe using egg whites.

      Here are 3 websites with recipes (the first one has 5 recipes):
      (In all the cases when they say use "pumpkin puree", this just means cooking chunks of your fresh pumpkin and then pureeing it.)
