Low calcium diet ideas

My Father is experiencing some kidney problems, and has been put on a strict calcium restricted diet. Two of the things he misses most are good ice cream and sharp cheese. Does anyone know of a calcium free substitute for these, or maybe some recipes which would simulate the taste and sensation of these foods while adhering to his diet? Any ideas would be much appreciated.
