Low country boil recipe?
Thu, 06/25/09 10:07 AM
( permalink)
I have the following ingredients which I will use in a low country boil this evening. I have never done it before and I would appreciate any advice as long as it is not too complicated. I have a friend that will join me as well as Mamaw Smith and I hope I can do it well. Wine or beer? Garlic bread? I have new potatoes, fresh corn, chicken stock, Old Bay seasoning, shrimp that has the peel on, smoked sausage. I need some advice on anything to add and a simple how to. Thanks Paul E. Smith Knoxville, TN

I just did this Monday night, a tad different though. I brought a half pot of water to a boil and added a Zatarains spice bag and let that simmer for about 45 minutes. I then added my new potatoes and let cook half way through, then added corn(I used frozen niblets)let cook until potatoes were done, added sausage, then shrimp. Once the shrimp was done, I quickly drained and sprinkled with Old Bay. YUM!

Lots of Old Bay to start,Then add the things that need to cook the longest,Potatoes,Corn,Sausage,Right at the very end throw the Shrimp in and give them three minutes any longer they will be hard to peel. A Frosty Cold Beer is the beverage of choice. I wish You could get some of the Shrimp that they have been catching Offshore here.Sweet !

We do ours very similar to Rusty246 - get the Zatarains bag going in the big pot with sliced lemons and peppercorns for about 10 minutes - add fresh artichokes and after about 15 minutes add new potatoes and fresh corn. Cook for about 10minutes. Add the jumbo shrimp - turn off the heat and let everything settle for 3 minutes. Do not overcook the shrimp - they'll be done before you know it. Drain. Sprinkle with Lousiana Shrimp & Crawfish seasoning - get an ice cold beer and plenty of napkins.

I mean, honestly, it was poor people food once upon a time. You could probably throw anything in there.

During the last few minutes, toss some clams in there. Also, after you do the boil, strain the liquid and boil it down for a chowder base. Nothin' like it!

Thats what I use too, 1/4 cup Old Bay to each 2 quarts (I have an 8 qt stockpot) and let it cook 10 minutes. I add the potatoes, small yellow ones, wait 10, add smoked sausage, wait 10, add halved fresh corn on the cob, wait 10, add shrimp, boil till pink and floats, drain all, serve with shrimp cocktail sauce.

my parents did a "boil" on the grill. Came out great. Mom promised me the recipe - once she sends it, I'll re-post. I'll mention changes I'd make one recipe posted, at this point, that wouldn't be helpful. Bascially, though, ingredient go into tightly seal aluminum foil and is cooked on outdoor grill - my Dad used his gas grill.

Michael Hoffman Paul, that sounds a lot like Frogmore Stew. Michael, I am not quite sure what Frogmore stew is. I may have erred in calling it low country boil but I tried. It actually came out very tasty and my family sure did enjoy it along with some tasty garlic bread. Paul E. Smith Knoxville, TN
