i did talk to the installer yesterday.
and we do not have any ss sheets left over.

mike that would be awsome if you could make a couple of shields for me.
also if you have extra sheets. i was thinking what the DR. said about puting a sheet up against the refrig.

Mike not sure you;ll know the answer to this but what can you tell me about the quality of stainless steel? I know some has a greater amount of steal than other grades and will hold a magnet. So it's a lesser quality than other grades. Is there a number grade or some other way to tell if your buying a really good grade of stainless?

Hello Dr. All SS has the ability to attract a magnet, it all depends on how it has handled or processed. I have a 6.00 scratch awl with a rare earth magnet on one end and it will stick to most SS. If the SS sheet was burned out with a Plasma cutter the burnt edge will most likely attract a magnet, the same with a SS wire weld, it will most likely attract a magnet. 304L is what I would use on most applications. If you will be doing work with chlorides " SALT "  you would want to use 316L or H, 316 L is chloride resistant.
I built a SS Wet scrubber, 120 inches I.D. When the Code inspector was talking to me I dropped my $6.00 scratch awl and it stuck to my weld and he took a picture of it and showed it to the customer and the engineers who gave me the job, I almost lost my job because they said 316L cant attract a magnet but it did.
If your SS rusts it was probably in contact with Black Iron either in the mill, transportation S&H press brake or even a shear.
De-Rustit is a sulfuric acid paste or liquid that will stop the rust.

It's not a rust problem, it's a cleaning problem with lesser grade SS. My walls require a two step process to clean. The 1st step using the purple stuff from Sam's Club (ProForce Heavy Duty Degreaser) Model: 7000014 Item #: 902177. Good stuff takes any grease off and sucks the oil out of the SS. So it leaves the SS dull and sometimes streaks. The 2nd step a SS polish puts the oil back in and makes it look like new.
 
However my SS counter tops are a breeze to clean with any good window foam and especially with Sprayway Glass Cleaner from Sam's Club Model: SW050CLUB Item #: 611788.
 
No need to do anything to the counter tops other than spray and polish and they look like new. I was thinking it was ether the thickness or the quality/grade of the SS. What do you think? I have read the http://en.wikipedia.org/wiki/Stainless_steel   web page 3 or 4 times and it's the most garbled hodgepodge of information I have ever read. I'd love a good answer as I'm ready to order SS for the walls in my Step Van. And I want something that is as easy to clean as my current counter tops, no matter the cost per sheet.

PS Sorry didn't mean to throw anyone off with the magnet thing but my walls will hold a magnet but my counter tops won't. So I figured the amount of steel vs other alloys may make the difference in the two.

I understand, I know the owners of General Welding in Louisville, he supplies us with our abrasives and chemicals, I will try to get a hold of him this week and ask him.
When I work in food plants , we sometimes wipe the machinery down with a little WD-40 to give it that " Wet " look.

You could be dealing with different finish grades of stainless for your cleaning problem.  You can google this for more info, and I'm not even sure you can specify finish grade from some suppliers.  The finish systems uses numbers up to 10, I think above 4 or 5 is good for food grade, depending on the application.  For critical applications in food processing the Ra or roughness average is used to specify materials.  It may be you have a rougher grade of sheet that is more difficult to clean.

Hey marco. Yeah I have a few long pieces of s/s how wide is ur frig? And is ur fryer a pitco? Mine is a 35c+ model. I need ur number again I got a new phone. As for the type of s/s I bought type 304.
