In my book, bread crumbs are mandatory on mac & cheese, along with some melted butter on top. It adds the proper crunchy counterpoint to the dish. I thought everyone knew this.

Carb-o-phobia cracks me up.. carbs equals fuel, can't live without carbs.. unless you have legitimate blood sugar issues, a mac n cheese sammy once in a blue moon won't kill ya.

Going back to the original post, I see nothing wrong with a mac & cheese sandwich. Carb on carb I have heard...somehow I thought most people were over that fad, but I reckon not. I think Jennifer is right on the carb thing , but I wish she would lose the sammy thing, but I know that is not about to happen. So call it what you want Jennifer, I can live with it, I reckon. It is not really a carb on carb thing anyway...people seem to be ignoring the cheese. Very high quality protein and enough fat so one digests these carbs slowly anyway. For me, the carb on carb thing is pointless anyway...it is yesterday's fad diet.

I was at the store today and based on this thread, I bought a box of upscale mac & cheese and some Panko crumbs to experiment with so if you can supply some info that will help!

It was a classic "James Beard" style Mac and cheese, I assume cooled so it could be cut into big squares, egg and breadcrumb dipped, and deepfried to a golden brown. Right in the midst of this post I Googled this topic and found a Paula Deen recipe that seems mighty close. http://www.foodnetwork.com/recipes/paula-deen/deep-fried-mac-and-cheese-recipe/index.html Also, I'd totally eat the deep fried mac/cheese/hotdog contraption. No ketchup please.

They sell deep fried Mac and Cheese in the freezer section of stores. I saw it in a restaurant years ago and then found out they were just buying the frozen version. It's pretty good

Yeah, it's on St.Mark's Place in the East Village and it's called BAMN! Can't say I'm crazy about the place or the croquettes. Tasted to me like food you eat after last call at the bar. And it's a bit pricey for the quality and especially for the portions. I'll hit the local falafel place or Crif Dogs for a Spicy Redneck before BAMN. quote:

If somebody is engaging in "Carb Loading" prior to running a marathon, then perhaps this combination would be a good idea. For anyone who is not about to run a marathon, this would be an excellent way to throw one's blood sugar way out of balance. The glycemic load of that sandwich would not be good for anyone other than an athlete about to compete in a strenuous contest, and the average person should not eat something like this. If anyone wants a classic example of how and why we have an epidemic of obesity in this country, as well as a huge spike in Type II Diabetes, this sandwich could be Exhibit A.
