    Katie,

I don't know about Max & Erma's but here is the one I have used for years.

    12 slices bacon
    2/3 cup margarine
    2/3 cup all-purpose flour
    7 cups milk
4 large baked potatoes, peeled and cubed
    4 green onions, chopped
1 1/2 cups shredded Cheddar cheese
    1 cup sour cream
    1 teaspoon salt
    2 teaspoon ground black pepper

Place bacon in a large skillet.
Cook over medium heat until browned.
    Drain, crumble, and set aside.

In a stock pot or Dutch oven, melt the margarine over medium heat.
    Whisk in flour until smooth.
Gradually stir in milk, whisking constantly until thickened.

Stir in potatoes and onions. Bring to a boil, stirring frequently.
Reduce heat, and simmer 10 minutes.

Mix in bacon, cheese, sour cream, salt, and pepper.
Continue cooking, stirring frequently, until cheese is melted.

    Serve & Enjoy

Sorry I can't be any help either. There are two Max & Erma's within 10 minutes of me and I have never even tried their Baked Potato Soup. I like their Tortilla Soup so much, I get it every single time I am there. Is the Baked Potato Soup that good?

        Dear Katie,

I'm a big fan of their Tortilla Soup too, but I have to get past the spicy kick at first. Even though it's a good burn going down, it's still a burn, and I can't eat as much of it as I'd like (how's that for sounding like a real oinker?!!!).

Their Potato, Cheese and Bacon soup doesn't pose this problem. It's got a different (and wonderful!) flavor, and the potato, cheese and bacon are all distinct. I could sit in a bathtub full of this and eat and not leave a ring. It's real comfort food!

Drive to the nearer M&E's and enjoy!!!

Katie, welcome to rood food! You might try the "finder of lost recipes". You can find him w/ a google. I can't spell his name but it sorta Thadious (not right spelling). He is nice and will try to help you if the recipe is not already on his site. Then you can post it here when you find it.

CK, great sounding recipe! Bacon just goes w/ baked potato.
