I once made the mistake of ordering a "Kosher Corned Beef Sandwich" at a Holiday Inn in Charleston, West Virginia. What I got was two thin slices of corned beef on white bread with lettuce, tomato, American cheese, pickles and mayonnaise. (Courtesy Warning: I don't know if it's still there, but it was the Holiday Inn on the Elk.) Oh, and I was told their best wine was SHAB-liss.

Corned beef and cheese does not sound too Kosher

I doubt they had the slightest idea what Kosher meant.

Maybe the corned beef itself was Kosher prior to the construction of the sandwich?

My cheesesteak experience is extremely limited but mayo doesn't sound horrible to the point where I wouldn't at least give it a try.

Perhaps the corned beef itself was kosher, but the completed sandwich was not.  We see that kind of verbal confusion every once in a while.

Penn Station, a cheesesteak chain, was founded in Cincinnati and the proprietor has made a fortune on selling cheesesteaks with provolone, banana peppers and mayo. I really like it that way.

And yes, I know that's not traditional and yes, if I ever went to Philly I'd get it the traditional way.

I had a sausage and pepper sub from Penn Station. It wasn't bad at all. In fact, I think I'll get another one soon.

I checked out Penn Station.  The nearest one is 311 miles away in Virginia.

I would try the mayo if it was cut with some horseradish.
