Hey John, I still say you are painting those grill marks on. They are too perfect.  Stew Leonards had veal chops at $5.99 per pound again. This time I bought a dozen. I am finding out that there is a big difference in hard wood charcoal though. I purchased some no-name brand and couldn't get it over 500 degrees.

I am finding out that there is a big difference in hard wood charcoal though. I purchased some no-name brand and couldn't get it over 500 degrees. I hear you on the hardwood charcoal. I tried to use some namebrand stuff and it popped cinders all over the place like a July 4th sparkler.

Hard wood (Lump) charcoal needs a lot of air flow to reach maximum temps. Everyone I know of that uses Royal Oak is very happy with it. http://www.nakedwhiz.com/lumpdatabase/lumpbag11.htm
