Oh man, I loved those meatloaf sandwiches we would get to take as school lunchs. No coldcut compared. Mom made enough to last a few days. It was wonderful. I would sit in class and think of lunch. No wonder I flunked 1/2 my classes.

    The one improvement I've been able to make to my mothre's Meat Loaf recepie was to double it. That way there's always enough for sandwiches for the next couple of days.

      Rick F, not only eggs but the starch filler help bind the loaf together. My mom used to use rolled oats, and I use crumbs of oatmeal bread. Not just tomatoes, but any vegetable will help bind it too. Also, a combination of ground meats helps, especially ground veal. That's the point of meatloaf: which ground meats are on sale, and what seasonings do YOU feel like--today?

      Here's my meatloaf sandwich from the days of working somewhere with an oven but no microwave. On a jelly roll pan, place 2 slices of bread, mayo them, then cover with meatloaf slices. Cover THAT with slices of muenster cheese, then bake until the cheese melts. Before you slap it together, add a little barbecue sauce. The meatloaf will be warm and the bread toasted.

        I used to go to a great little corner tavern in Milwaukee called Karlovich's, south side of town. Had the best freakin' cold meatloaf sandwiches.

          Nothing like a leftover meatloaf sandwich on Good White bread with butter, chili sauce and black pepper.

            My wife makes meat loaf from a mix by McCormicks and it is fantastic!!! I love making a sandwich out of it.

              Eggs(a couple)tomato sauce until somewhat wet then italian bread crumbs to soak up MOST of the moisture. I also have bell pepper and onion in mine. Make sure any veggies you use are cut up fine.

                I can't recall many eating places, other than Karlovich's which I mentioned above, that serve meatloaf sandwiches. Do you find you make your own, or do you find them in eating places where y'all live.

                  My absolute favorite is my fried meatloaf sandwich served on grilled sourdough garlic toast made with my fresh garlic infused Tillamook garlic butter. The meatloaf is fried until dark and crackling crisp in lard. I then serve it with a pile of onions fried brown in the same pan, and a good strata of Heinz ketchup.

                    Last week, I made a meatloaf for the specific purpose of making sandwiches.

                    1 lb of ground beef from local farmers
                    1/2 cup of diced onions
                    1 cup of Quaker Oats
                    Some Heinz Chili Sauce
                    2 eggs, beated
                    Salt, and lots of pepper.

                    Mixed by hand, baked, cooled, then sliced the next day and served on locally-baked whole-grain bread.

                    My wife puts ketchup on hers, I use stone-ground MUSTARD.
