My Ribs and then Smoked Whole Ribeye




Smoked Whole Ribeye with Rosemary for the LPGA Party, Springfield Illinois June 5th 2009.This ribeye was smoked to 119 degrees and fast cooled until just before the party. Guest will be allowed to slice it as thick as they wish and then it will be finished very quickly on a very hot 500 degree charcoal grill.

Here is a pic of our BBQ Chicken that we do at one of our county fairs in August.



This is after about 6 hours! Yummy!

this is the way my daddy bbq'ed and it was soooo good ... it took me several years before I could enjoy bbq after he passed away and that was only after  my cousins, my daddy's nephews,  came to my mothers and bbq'ed.

A Hog on my Klose Smoker  I rarely do whole hogs they are a waste of good meat


Pork Kabobs made with Pork Loins


Smoked Spicy Sausage on a foot long Bun  I have a few customers that want these on my Fat Jack Lunch



This is my Cajun Sausage Sandwich.

no worries, friend. It seems like there arent a lot of men that do soulfood/southern food. Guess maybe its the "women in the kitchen " culture...I was pretty much raised by my mom (dad worked all the time), so she taught me how to cook.
