Midnight is often my third meal of the day due to my schedule.

But I often end up with a bowl of cereal, or something toasted spread with butter and/or Nutella or jam, or sometimes oatmeal.

We don't eat dinner until 9PM so there is no midnight snack.  When I was working in restaurants I didn't get home until 1AM, so dinner was at 2AM and was fish and a salad.

For me, after lleechef's gone to sleep and won't know, a sausage, peppers and onions sub or a plate of linguine with garlic and olive oil fills the bill.

Yeah, right.  I stay up and watch late-night TV!  I don't go to sleep until 2AM.........he's been snoring for many hours by then.
Every once in awhile, around 1AM I will have 2 spoonfulls of Graeter's ice cream.

Moments ago (12:35 CST), I consumed a bowl full of collard greens with crumbled up corn bread to absorb the pot likker.  It may have been the best thing I've eaten all day.  And I had some pretty good stuff earlier today.

In my college days a few years later, my friends and I would head over to the now long-defunct Broadway Diner on 111th Street and Broadway on the Upper West Side of Manhattan (the major competitor to Tom's Diner, which in turn was made famous by Suzanne Vega and Jerry Seinfeld) around midnight, and have what we ended up referring to as our "secret second dinner". Usually burger & fries, sometimes something different. Once one of us ordered lemon meringue pie, and the slice had a mosquito embedded in it. From then on, we referred to it as "lemon mosquito pie".

Since I work in the industry, I don't eat as much at work. Consequently, I tend to sleep eat around 2:00am or so. Doesn't matter what it is for me as long as it's filling. LOL. As a choice though it is usually some cheese, French bread, and some type of salumi. Maybe some green onions and cherry tomatoes. With a Kiltlifter ale.
