I enjoy deer venison as well as elk. I confess I've never had moose, but I think treated the same as any deer, it would be fine. I had bear that my dad shot, years ago. I confess I didn't care for it at all. Seemed greasy and gamey, according to my recollection. Game birds are my preference today; quail, pheasant, duck, chukar, doves. Great stuff!

I have not cooked with moose, but I am very familar with venison. My favorite marinade for venison is cranberry juice. It removes some of the "gamey" flavor in the meat(you do not want to remove all of the "gamey" flavor, if you did remove it all, why not just eat beef?) & I like the taste of cranberry in the meat.

Moose meatloaf - 1lb moose grind plus 1lb ground pork. Add 1 cup water, 2 eggs, 1 cup italien bread crumbs, 1 pckg liptons onion soup mix, and a couple tbles steak sauce/ketchup (whatever). Blend all ingrdients and place in crock pot for 8 plus hours, on low. Place meatloaf on lids in crock pot so it does not boil in juices. Great!
