Truck #2 got final inspection/clearance today, starts going out tomorrow!

Got call this afternoon from people that put on festival I did last weekend, DEFINETELY in for december show (both trucks)and offered me to do another simular show this coming weekend in a town about 3 hrs away.

Freezer/cooler trailer and both trucks will be stuffed till I cant fit anymore this time! Gonna be smokin ribs and butts all week long.

Because I just dont have enough to do already, started thinking about making an ice cream parlor on wheels with all that ice cream equipment I recently bought. I mean all out with cones, sundaes and splits and shakes-the whole 9 yards. Just for shows and stuff. I know where theres a 20ft trl with a huge 2 part window most of the way down the side, and surprisingly the equipment really doesnt take that much power to run. Have a gas convection oven to make the cookies for ice cream sandwiches and stuff. Just thinkin....

    I had a hot dog cart whoop me this weekend. I cannot imagine 3 trucks.

      You must have one heck of a crew. I run two trailers about 15 times a year with a solid crew and it's pure hell keeping them going and ran the way I want them ran. We do high volume locations with high dollar rent so getting the food out the window is a must. Good Luck this weekend

          this is a strictly family run operation. They all know exactly what is expected and how to do it. They were raised in the food business and have my same disease of actually liking it.

          Not saying we can do this all the time, but right now everyone is into it.

            Just dont go too crazy. I new a guy with a very successful place who decided to open another cross tow and he had a disaster happen at the new place and it wiped him out.

              UPDATE

              Just bring anyone up to date, day 1 of new truck little slower than expected-day 2 kicked in better, got a few kinks to work out but pretty pleased so far.

              Original truck still kicking hard and strong. BBQ is a lot of work to keep product up, but its getting easier.

              Looking forward to this weekend.

                  BS with all due respect Spud, it's always a lot of work when it's done right. And worst of all it never gets easy. BBQ is not a pull it out of the freezer and throw it in the deep fryer food, as you are finding out. If anyone does BBQ right, (it's a watch over it like a mother hen food), and then if it's butts you have to pull it and cool it or serve it. BBQ is the most time consuming food product ever served from a mobile unit. That said, it's a product that people dearly love when done correctly.

                    I like to smoke meat for parties, but i could NEVER imagine doing that as a job. I give you ALOT of credit nothing is more work than bbq. (well worth it.) but i don't have the patients to do it on a everyday basis. I did a pulled pork and a brisket over the labor day week end. Pork was on the money. Brisket.... Not so much. (only the 2nd brisket i ever did. But didn't care for it. too dry.) Keep up the good work.

                      Hard ice cream is the BIGGEST pain in the behind. It gets harder and harder to scoop. Ingenious scoopers they have on the market or create? Do not work for high volume business, if they work at all.

                      I would GLADLY volunteer to have bacon spit at me, for hours, than have to constantly bend into a freezer and break my wrists & arms scooping hard ice cream.

                      It is like taking a ceramics class. The fist day, the clay is all soft and nice. Day 2, like a rock. No fun! No more ceramics class, unless I get soft clay!

                      From my experience, most women feel the same way. It is not a lack of willingness to work hard. This work, is miserable. Hard working women will do it, but MOST will catch an attitude.

                      Hopefully you have a male in mind, to do the work. If he has big guns (and likes to flex a lot) that is a plus!

                      Do yourself a favor, Spud. Go soft! Women love to do the swirly thing!

                        UPDATE

                        Learned a very valuable lesson this weekend. Feel free to write this down.

                        Digital cameras do not like being dropped into 350 degree fryer.of course this happened end of sunday night!

                        Weekend was outstanding anyways. If I can keep doing all this weekend stuff for this kind of money, I might just do that full time and leave the street. These music festivals are filled with people that are freindly, do not mind spending and really like to eat and drink.

                        Pretty much cornered the market with the 2 trucks and the even bigger variety we could offer this time. No body waited any time at all both days. Had breakfast going both trucks with great comments all around.

                        BBQ solid hit, just need to get more ahead on product levels. Had to spend half night after getting back last night to have for today.

                        Have made good freinds with these promoters and feel this will serve us well in the future. Its to their credit to have someone they can rely on to be there and serve what the people want without whining.


                        Cant think of anything that didnt sell super well.
